Simple and Moist Banana Nana Bread

This is my first recipe on my new blog and I wanted it to be simple but delicious and a hit in my house. I came across banana bread, a recipe that I enjoy baking with my kids as well. It's so simple and they memorized it quickly. My kids are like the average kids. They are very very picky, like “leaders in the line” picky. When I started making the banana bread it was pre-pandemic and follows my approach to recipes when it comes to my kids, "The simpler the better". Me on the other hand will explore more complex dishes, but that's another story for another post. I said all of that to say, I don't have any reviews. You guys will be my first reviews. I hope you enjoy it as much as my little ones. This banana bread bakes a tender, bake sale worthy loaf that is full of banana flavor with hints of walnut throughout.

My approach to recipes when it comes to my kids, "The simpler the better".


Banana bread is that classic treat that brings comfort with every bite. The simplicity of this recipe makes it perfect for beginners and seasoned bakers alike. 

As a parent, finding recipes that your kids enjoy can be a challenge, but this banana bread seems to have passed the ultimate test with flying colors. I did come across one hiccup, the walnuts. They don’t like nuts or their texture. So to keep the flavor for dad and make it pleasing for the kids I grounded the walnuts and added it the batter. If your kids are picky eaters, this banana bread is a surefire way to win them over with its moist and tender crumb, filled with the goodness of bananas.

Banana Nana Bread


Ingredients


  • ½ cup (1 stick) unsalted butter, room temperature

  • ¾ cup packed light brown sugar

  • 2 cup overripe mashed bananas, (4 medium bananas)

  • 2 large eggs, beaten

  • 1 teaspoon pure vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • ¼ cup chopped walnuts, grounded (optional)

  • 1 banana, sliced vertically down the middle (optional)


Directions


  1. Preheat to oven to 350°F (175°C) and grease one 9x5" loaf pan.

  2. Combine flour, salt, and baking soda in a large bowl. Set aside.

  3. Using an electric, stand mixer, cream the butter, sugar, and vanilla extract until light and fluffy. Then, add your eggs to the mix one at a time, and add in the mashed bananas until well blended.

  4. Add the ground walnuts (if you are using them) and then add the flour mixture into the banana mixture until just combined. Pour the mixture into the prepped greased loaf pan. If using the vertically sliced banana, position in vertically side by side on top of the batter.

  5. Bake the batter for approximately 60 minutes in the preheated oven until a toothpick inserted in the middle of the bread come out clean. Allow the bread to cool for 10-12 minutes, then flip it out of the pan and place on a wire rack to cool for about 20 minutes.

  6. Slice in desired portions and enjoy! Serve them right after or store them in an airtight container for up to four days or freeze up to 3 months.
